I read several of the comments and reviews and used this as a baseline to create the perfect lentil soup (as usual I made some of the suggested adjustments. I included some additional ingredients like frozen chopped spinach and ground pork sausage (1lb.--like Jimmy Deans' or your choice vs. ham hocks or smoked neck bones. I sauteed the vegetables, browned the sausage and followed the rest of the recipe. I added a pinch basil and Ms. Dash. I love flavor!! Oh my God! It's very very good. I froze half it and just ate the remainder this past weekend. BTW, I boiled the elbow macaroni separately and added it as suggested by a reviewer. The addition of frozen chopped spinach and ground pork makes for a very hearty and delicious soup. Use low sodium chicken stock if you are concerned with excess salt. Good luck!

This is a delicious and very easy soup! My picky child also loved it. Definitely worth a try. I couldn't get fresh thyme, so I subbed dried Italian seasoning . Also omitted parm cheese to save calories. Added a squeeze of fresh lemon at the end. Yum!!

Very flavorful! I didn't have any low sodium chicken broth, so I should have probably not added salt, so it was a bit salty. If you don't have low sodium broth, just omit any added salt. I have 4 kids, ages 2-9, and they all liked it. I will definately make it again.

I made this soup today and I too left out the pasta and parmesan cheese to cut down on calories and it was AMAZING! So tasty and definitely one I'll make over and over and over again! Thanks Giada for another incredible recipe!

I loved this soup! I left out the macaroni and parmesan to cut calories, but other than that, I followed the recipe exactly. So good and so healthy. Freezes beautifully.

Tasty and healthy. Instead of chicken broth, I got 2 pounds of chicken thigh, boiled it in water and then added the whole thing to the soup. so I had chicken in the soup. my 4 years old son didn't like soup. I made this one and he asked for it again.

Very tasty and filling! I made mine with Umbrian lentils which don't go to mush when they are cooked and i added a squeeze of fresh lemon juice whilst adjusting the seasoning at the end. There is enough for two more servings tomorrow, when I suspect it will taste even better.
This reminded us very much of the lentil soup we were served when we visited Preci in Italy a few years ago - and which used the local lentils, of course.
We don't have Giada on UKTv but I shall look for more of her recipes!

Great recipe. My wife loves lentil soup, but buys prepackaged because she's busy and rarely home. Yuk! I decided to look for a good simple recipe and found Giadas. I figured it had to be good because Giada makes everything look good, right? Well, it was good, and not so difficult. Instead of buying chicken broth, I purchased a bunch of chicken legs for the BBQ, slow boiled at 160F for 1 hr to extract the broth base and boom, I've got broth!
I don't cook a lot, but when I do, I prefer Giada's recipes (play of words from the XX beer commercial.

Very good and easy to make. I do like a little more spice so I did add some pepper flakes to the mixture. My husband is not a fan of this type of dish but he did like it but wanted to have more pasta in it. I added one cup of pasta because he does not like soups with a lot of broth. I am very pleased with the recipe and agree it is fine without the cheese.
