Yummy!
The way mia momma & nonna taught me
was to add a meaty ham bone with 2 bay leaves, & using Roma Tomatoes. Also, Di Napoli's canned tomatoes are excellent, if u can't find any great tomatoes.
When I can't get a ham bone, I substitute Bacon (an apple smoked bacon
is just delicious!
Also, red pepper flakes - when U want to kick it up!!!

I wanted a recipe that was close to the lentil soup recipe I grew up with; yet, with some variations. Oh yea, this is it! I can, and do eat lots of lentils!

One of the best soups I've ever tried! Friends have called it the best lentil soup they've ever tasted! I put in a little more pasta and it works out just as well.

OMGosh am I a gourmet cook or what?!!! Ok in reality this recipe is sooooo quick and easy! It's the Lentil Soup I posted in the phase 1 & 2 soup threads. I added fresh zucchini instead of pasta (I follow South Beach Diet, and some frozen chopped (thawed and squeezed of liquid to it too.
DELICIOUS and looks beautiful! Thank you for this recipe!

My husband and I enjoyed this recipe alot. It came out very nice. I did add just 4 cups chicken broth, 4 cups water and 1 cup of white wine. It is very hard to find good store bought chicken broth living in the Netherlands. There are not many to choose from and all are very salty. I also added just a touch of red pepper flakes to add a bit of a zip to it. Even having to improvise it turned out delish. Would highly recommend this to everyone.

Really love this soup. I add a little spicy chicken andouille sausage because my family prefers it with some meat. But just great vegetarian too.
