This is so easy to make , it turned out delicious . I skipped the pasta and added pepper flakes for some heat. Everyone loved it !

This soup is so delicious. I modified the recipe a bit. As one of the reviewers suggested, I sautéed 2 pork sausages in olive oil, first. Then removed the sausages to the plate and added all the veggies to the fat in the pot. Instead of using 11 cups of stock - I used 2 cups of chicken stock and 7 cups of water (since I have a fat I needed from sautéed sausages. For the lentils - I used 1 1/4 cup and not the whole pound. Added the sausages back to the soup half way through the 30 minute cooking - and the result was fabulous. Strongly recommend.

A meat-free recipe that my husband ate. We did find it needed something, though... we added red pepper flakes.
Also, 1 pound of lentils is not even remotely 1 1/4 cups. A pound is way too many!

Very good soup!! I browned some bacon first then removed the bacon with a slotted spoon and cooked the veggies in the rendered bacon fat and olive oil. Make sure to use 1 and 1/4 cup of lentils and not a pound! Delicious recipe!

loved this recipe just finished and i must say it is filling and delicious!!!!
i made minor changes...
i added chopped bacon (which i sauteed with the veggies in the beginning with half cup of white wine, also added some chilli flakes

Fantastic flavor combination! I'm an amateur in the kitchen and even I couldn't mess this one up. I did make a few changes though: I used 1 cup of small seashell noodles and only 1 1/4 cup of lentils, which was plenty. Also, I added some ground up Johnsonville Italian Sweet Sausage that I cooked separately in a sauce pan and added it to the soup about half way thru the 30 min cook time. The sausage puts this soup over the top and I highly recommend adding it if you want a non veg option. I also left out the celery since I'm not a fan of it.

Nice depth of flavor. Simmered longer and followed other suggestions by reviewers (more vegetables, added potatoes, no olive oil at serving. A lovely chilly weather soup.
