    I had never really cooked with shrimp, but when I saw this recipe on TV I had to try it--it looked delicious. I don't cook with alcohol, so I substituted apple juice for the white wine, and I don't live the low carb life so I use rice or angel hair pasta instead of spaghetti squash. I also prefer to use grated cheese instead of cubed. This recipe is a winner in my family and extended family as I made it for my mother's birthday! Yummy!

    Sorry, but I'm a Malto Mario fan and he says you NEVER combine cheese with seafood because the cheese flavor overwhelms the beautiful flavors of the fish or seafood.

    Saw the show early one morning and prepared the meal that very same night. My husband loved it, and was amazed by the taste. He told me that "it tasted like something out of a restaurant". I didn't use the cheese or the avocado and I served the scampi over a 1/2 cup of brown rice instead of the spaghetti squash. I purchased butternut squash by mistake for the recipe and didn't realize my error until it was time to prepare the meal. This is why I improvised with the brown rice. The garlic butter with the fresh herbs is what really set off the dish and I would use the garlic butter again on other fish/seafood in the future.

    My husband and I really loved this recipe! I was a little hesitant about the avocado, but I also added some mushrooms and steamed about four asparagus spears ---
    all we can say is YUM!

    I made this with real pasta instead of squash. It was wonderful! Easy and delicious. But fancy enough for company. We added chopped tomato before we served it. That was yummy.

    Why are people rating this if they haven't made it? Why do you think there should be a chili? geez. Make it as it is and don't worry about the name.

    I had this without the avocado, and it was just awesome. The sauce is wonderful and has a lot of flavor. My husband even tried the squash and liked it mixed with the sauce.

    George Stella has officially become one of my favorite chefs. So far all of the recipes I've tried from him have been packed with intense flavor and creativity. This recipe is no exception. The Anaheim Shrimp Scampi is a recipe that I keep coming back to time and again. It's quick, easy, and just plain good. Love it!

    I have not tried this recipe as yet, but, I won't until I know how much anaheim chile to put into the recipe. I don't see any anaheim chile listed in the ingredients. Am I blind?
