This is a great light soup for a first course or a lighter meal! I literally threw it together in 5 minutes, so it's great when you're pressed for time. The only thing I changed was that I added a pinch of fresh chopped thyme. I didn't find it bland at all...simple maybe but not bland. I love the way the Parmesan cheese melts when you sprinkle it into the soup, so much fun!

Can easy be too simple: Yes! This soup was a little too bland for me. But, otherwise, it wasn't all that bad. I enjoyed the cheesiness and warm broth flavor. All it needs is just a bit more flavor. I tried adding a bit of bell peppers and it turned out great,

I cannot imagine anyone saying this soup is flavorful. This soup is extremely bland but a great jumping off point. A little onion, chopped carrots and celery, spinach and parm cheese and now you have a great tasting soup.

The only thing I recommend doing different is adding some more seasoning. I added celery salt, thyme, oregano, garlic and basil. Also at the end I added baby spinach instead of parsly and it tasted great!!

My kids love tortellini soup....the only thing I do different is saute about a 1/2 cup of thinly sliced onions in a little olive oil and then add the broth....I've used both chicken and vegtable broth and both are delicious.

I ate the most amazing cheese tortellini soup in Minnesota while my husband was in the hospital there. In trying to recreate that dish I found this recipe. I think it would be better with vegetable broth but this was amazingly delicious! This is a great basic recipe, as others have said. Next time I'm going to try bigger tortellini and veggie broth.

This is incredibly EASY and so good. Tastes like you ordered it in a restaurant and yet it's completely worry free. I like to add spinach for extra nutrition, but otherwise I don't do anything special. It's good made with vegetable broth rather than chicken broth, too. The only thing is that it's not so good the next day because the tortellini gets a little bloated, so I usually only add as much as will be eaten at once, and then add more pasta when I eat it the next time. Good enough to serve to company!

I have been making something like this for quite some time. What I love about it is you can totally make it your own, using whatever additional ingredients you have on hand. I usually add aome garlic, spinach and mozzarella cheese. Not only does it taste great but it's really pretty in the bowl. Excellent when served with garlic toast.

i had to state that i really think that giada meant for this to be an easy base for a simple go-to soup when you need a quick yummy warm meal. i just made it just as she said and it was still good, not bland as some have said- how is chicken stock bland?? people need to stop thinking you need a bunch of ingredients for everything. i think you are supposed to add what you wish into it- i ended up adding some garlic and crushed red pepper since i had some sitting around. i wouldve added spinach but i dont have any. as for the person giving her a hard time for it not being authentic, i definitely think that giada knows that. she wrote this recipe as a simple and fast meal for people who dont have the time to put together something complicatedl, like one with homemade chicken stock and tortellinis. all in all i think this is a really good recipe that you can put your own twist in however you like or just eat it how she has stated. i still love you giada!!

I'm eating this soup as I type and I must say I'm really pleased! I'm glad I read the reviews first, as I made some minor changes. First, I used organic free range chicken broth and Trader Joe's cheese tortellini. I added garlic salt, pepper, thyme, and a pinch of sweet paprika to the broth and the flavor is incredible. A definite must make when you're feeling a little lazy.
