    You can practically put ANYTHING on these chops and they'll come out DELICIOUS!!! The cooking method is KEY! DELICIOUS!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

    The pork chops were perfectly done after seven minutes of cooking, and the carrots were perfectly cooked after about three more. The carrots turned out spicy and sweet, the orange juice really tying it all together (just like the Dude's rug!. overall a fantastic dinner.

    The cajun spice was very salty - and I cut the salt and put only 1/2 a tbsp instead of the called for 1/4 cup. Next time I will leave the salt out and cook the carrots in a seperate pan as they seemed to absorb too much of the cajun flavouring. Potato pancakes turned out great though - I added some rosemary and minced garlic to them for extra flavour.

    These chops were a great change from the usual. I used a cast iron skillet for the cooking and added a bit of brown sugar to the carrots right before serving. I would suggest cutting the cayenne pepper by half, if not more. Maybe I'm just a wuss, but it was way to hot for me. Very juicy though.

    This is a tasty recipe that's easy to do, even though the potatoes take a little while to prep. The carrots are outstanding, and the fresh thyme makes a difference. This is a part of my regular dinner rotation!

    Too much salt called for in the Cajun Mix. Also, don't dredge the chops in the mix or you will contaminate the mix.
