    Yummy recipe!!! Just a suggestion, if you want to make it a bit more high-end for guests, use instead jamon iberico de bellota - aka pata negra or black hoof-. Iberico has a strong and delicious flavor,

    As Sara wrote in her intro, this dish is perfect for brunch because it's so easily done ahead. Once you make the egg roulade (whose preparation was oddly similar to that for the profiteroles which I made for dessert, you're laughing! Obviously you can fill the egg roulade with whatever you like. I filled mine with cooked chopped pancetta, smoked mozzarella, spinach, and canned red peppers. Topped off with my homemade marianara and pecorino, this dish really wowed my guests. Next time I might try it with smoked salmon, capers, chives, etc. I love Sara's simple recipes for company that LOOK complicated but really aren't!
