    This was tastier than I expected. I found the chicken-vegetable mixture to be a little lackluster, but I was singing a different tune after the quesadillas were all prepared. I didn't make the "tortillas", instead using regular tortillas. Also, I added some red pepper flakes for some added spice. The only thing I'd change would be to add the veggies BEFORE the chicken, in order to give them time to soften and carmelize a bit. Yum!

    The chicken filling was easy and very good. I made the soy-flour flat bread from the recipe, and it tasted good. It didn't turn out exactly as you'd expect flat bread (or corn bread or a tortilla-like bread to look. Good for the family, but maybe not for guests!

    These Quesadillas were easy and fun to make.They also tasted Muy bueno. I suggest if you make them to also cook the chili con carne, which was also on the same show.

    This is a great dish! Of course I put my on twist to it but it came out wonderful. I'm still getting raves on it. Great for a mexican themed dinner. Only thing is that prep time took me a while....but when putting everything together it was a breeze.

    My wife and I love these quesadillas. We make them about twice a month or so and have given the recipe to many of our friends who have decided to try low carbing it.
