Thankfully, I read the reviews on this recipe before I made it, which made me go back and re-read the recipe. For my family of three, I halved everything in it except for the chicken stock amount, and it came out beautifully. Fortunately, I had some risotto knowledge on which to draw, and thought the proportions looked off. Good luck!

This was awful. WAY too much food. Took 2 hours of adding liquid to get something edible. NO flavor; we added all the parmesan we had in the house -- triple the amount called for in the recipe. Check out the liquid to risotto ratios in some of the other recipes -- this one is WAY off. NOT GOOD. i don't know what the pro- reviewers are talking about. REALLY DISAPPOINTING.

There was not enough stock called for to make the Risoto.
The amount of Vermouth was a tad overpowering and the amount of Safron called for gave the dish on huge overdose of safron.
If you make this dish: at least double the stock required, half the Vermouth and just a pinch of Safron.

I did have to subsitute becuse I did not have some of the ingrediants on hand. I used regular rice & half & half, but it still came out very good. & the best news there was NO complaining from the kids. Thanks for submitting this recipie.

I changed the amount of rice to 24 ounces and omitted the saffron (didn't have any on hand. This was delicious, I might add some mushrooms next time

After adding the 6 cups of stock, clearly it wasn't enough. In total, it took 12 cups of stock. It would have probably tasted better without the $14.00 bottle of saffron I purchased at Target. It was really dissapointing, I gave it to my neighbors b/c I know they use Saffron, and they eat a lot of rice. I don't know how this recipe made it into the challenge cook-off. Did they try it first???
