    My husband has an unbelievable sweet tooth that is hard to satisfy on a low-carb diet. This certainly did the trick, though. Wonderful!

    I was a bit worried about making a cheesecake, because I'd never used my springform pan.

    George Stella's instructions are clear and easy to understand, and he explains the reasons for each step.

    My pan was larger than the one called for in this recipe, and it still came out absolutely perfect!

    DEAR MR. STELLA- I MAKE THIS EVERY OTHER WEEK FOR MYSELF- AND HAVE ONE PIECE EACH EVENING. NEWLY DIAGNOSED WITH DIABETIS, I FEEL I HAVE NOT LOST SOME OF MY FAVORITE TREATS!! THIS IS SOOOO EASY TO MAKE, AND SO LIGHT IN CALORIES AND CARBS, EVERYONE SHOULD TRY IT, JUST ONCE.

    I was craving cheesecake one night so I thought I'd give this one a try. It is a bit of work but it is so worth it. My husband, who is hesitant to eat anything "different" had no idea it was even low carb. I was hoping to see how well it would freeze to ease cravings later but he finished it off in no time. It is creamy, fluffy and delicious. I also added some strawberries on top for my fruit serving. I highly recommend this cheesecake!

    Although it took me a whole day to finally taste the cheesecake it was worth it! My husband and I could not believe how identical it tasted in comparison to its full calorie counterpart.

    Instead of using fresh berries we opted for Smuckers Strawberry Preserves that is made with Splenda.

    Thanks for a delicious recipe!

    I just love cake and cheesecake. I used to eat them daily..
    on low carb life style I can't any more until I made this recipe...
    so quick, easy, delicious and low carb..
    you can make it even less carb if you dont add Ricotta cheese and it will still be great...
    it is not as sophisticated as it appeared on the show...
    you also dont have to use the crust if it is just for you...
    I even eat this as my breakfast.....
    the only thing is it is gonna make you eat more of it and then more carbs.. watch!!

    Once you try this, You'll stick to it, especially knowing it's low carb. I tried it and couldn't believe it was Low-Carb.
