This is a great Pumpkin Pie recipe for low carb dieters. I would, however, add maybe 1/4 cup more of the pecans for the crust. I also plan on trying the crust recipe with other nuts.

The taste was just ok, but the worst thing was how it looked after it came out of the oven...FLAT as a pancake. So it looked bad, but tasted ok. It needed something for the taste, but I have no clue what.

This recipe is not only easy, but delicious. We made one mistake while making it...we put it in a water bath. It made it very light in texture. I'd do this again the next time I make it.

I made this for my mom who is diabetic and misses desserts very much. Most of the rest of the family even snarfed it right down, but we didn't care for the pecan crust. That part tasted very Chemically- Splenda fake. I think the pumpkin pie part could even fool some people. This I would make again.

I thought this was great and not "chemical" tasting at all, or too sweet for that matter. It's just personal preference, I guess.

I doubled the crust and added more sugar to the pumpkin pie mixture. To be honest, I might even add a little more next time.

I will definitely make this again. Yummy.

I can't believe how easy this was to make. It tasted great, almost forgot it didn't have all the carbs of regular pumpkin pie.
