    These are THE BEST lemon bars I have tasted in awhile. I wasn't sure about the adding of cornstarch to the crust at first but it came out delish! Definately lemony enough for me and not too sweet which I think ruins lemon bars in the first place. Thanks Emeril for a winner!

    PS.. by the way we have the same birthday. Lucky you! lol

    Luscious lemon bars-great with lime, too. Reduce the sugar to 1 1/4 c.-even better. And the pastry can be easily made in a food processor.

    After cutting into squares, I piped sugar and vanilla flavored whipped cream onto the bars- even better! They were gone in a flash!

    This is the first Emeril recipe I've tried and I'm very happy to say his lemon squares/bars are superior to all other recipes I've tried--even the Barefoot Contessa's recipe. You don't need the Limoncello. You don't need the parchment paper. Spray glassware with Pam. Crust was wonderful as was the rich, lemony custard. DELISH! Only gets better the next day. HINT: Work butter really well into flour mixture with a pastry cutte--takes at least five minutes. Crust will hold perfectly together this way after it is pressed down, refrigerated and baked.

    Made these lemon squares for a luncheon. They were a huge hit. They were just slightly tart. They came out perfect and everyone loved them.

    These are the best lemon bars I have ever tasted. I left out the liquor because I didn't have any. The milk really smoothes out the lemon flavor. Will definitely make again and again!
