I had some family members with reservations about this recipe but after tasting it said it's a keeper! Extra topping and thousand island dressing drizzled on each serving is a must!

This was a good recipe but it just didnt quite knock our socks off. It seemed a tad bland. I followed the recipe exactly except I had to substitute the gruyere cheese for extra swiss b/c the gruyere was $18.99/pd!!!!! It still cost about $18-20 at the grocery store for the rest of the ingredients. It did make tons of food though...liike 6 helpings. The one thing not listed that you MUST have is 1000 Island dressing. I added "Marie's" and it was great. The recipe just isnt the same without it. Maybe I didnt add enough salt and pepper or something...but it just needed a little kick...maybe more spicy mustard? I used whole milk to make it creamier. Overall, I would make this again....and would try to get the gruyere cheese to see if that would have made a big difference. Oh, and if you dont like sauerkraut...dont worry. I love it and my boyfriend doesnt but he said he really didnt even notice it that much and he liked the dish....so I actually could have put more than the 14 oz in it...I liked the crunch that it gave.

I was a little apprehensive of this recipe because I didn't think the pasta would work. It does, no doubt. I have never had Gruyere before and it is simply fantastic. I used swiss, gruyere, and colby jack cheese. Next time I may try the swiss on rye in place of the plain swiss. I may also bake the dish for a few minutes to heat everything through before turning on the broiler. I thought the meat and kraut cooled the sauce and pasta off a bit. Overall a great recipe!!

Yes, I chickened out, I just couldn't quite go with the sauerkraut this time. And, in the interest of economics I went for a much less expensive version to try this recipe (I could have dropped $30-$35 on this otherwise. Gruyere is another kind of swiss- so instead I just bought swiss and extra sharp cheddar. I did not buy rye bread and parsley for the topping (even though it sounds good. I did get some brown mustard, and I bought thick sliced deli pastrami. I also used a yellow onion. I still may do the whole recipe one day - but let me say even this version was really really good (my favorite mac and cheese so far. The cheese, mustard and deli meat have an awesome flavor. Very nice and not hard to do.

I am a huge fan of the classic rueben, and when I saw this one, I thought - naaah - it's not going to work. Well I made the dish exactly as she stated, and brought it to my office to test it on my co-workers. And we ALL loved it! The only thing missing we all agreed was the Thousand Island Dressing. So I bought a bottle and just drizzled it over the top of my own plate and it was FABULOUS!!
    Congrat's on a great one!

I must admit, I had apprehensions about what this would actually taste like, but I really, really, liked it. Very easy, very tasty and the best of two of my favorite foods, mac n cheese and a Reuben sandwich. The only thing missing was the thousand island dressing from the Reuben, but I guess you can't have everything. When I figure how to work that in, I'll add another post. Don't be afraid...it's only food.

My husband loves ruebens and everyone in the family loves mac & cheese, so I tried it. I even put in the sauerkraut. (OK, half the amount called for. But I kept the other half so he could add it in to his if he wanted to! We all LOVED this recipe. Be careful though. We ate WAY more than normal. Renee

We really enjoyed this recipe. A very different take on the ordinary Mac n Cheese. My husband loved the saurkraut/cornbeef combination with the mac n cheese. We both loved it.

I switched the cheeses around, but this is the best mac & cheese my family has ever had! It was even easier to make than the boxed mac & cheese.
