First made Jan 27 2008. Used a red and yellow bell pepper for looks.
    Great recipe.

This was the best tomato soup I have ever had. I used half & half instead of the cream. It worked well and cut back on the calories.

This soup is delicious. I make a double batch and freeze some. I think it's wonderful with fresh grated parmesan on top.

Other than being quite easy to make, the taste is incredible.

I added about twice the heavy cream, and after prompting from my son, half a package of shredded cheddar/jack. Unbelievable. Now I have a use for winter store bought tomatoes!

    Thanks

It was absolutely fabulous! It tastes like a red bell pepper soup at one of the nice restaurants in my area. It's a little time consuming but well worth it. I would make two batches and freeze one for later!

This recipe kicks butt. The pancetta or bacon is a must, it brings out the taste of the soup. Great recipe.

I made this soup with peppers, onions, tomatoes, and basil from my garden. What a perfect soup to showcase the rich tastes! The roasting adds a unique taste not normally found in most soups. I recommend this recipe highly!

This soup is so easy and so flavorful. The roasted tomatoes really gives it a nice flavor. Great for the mounds of tomatoes that come out of the garden at the end of the summer. We even roasted some tomatoes and froze them so that we can enjoy the soup throughout the winter

This recipe works well without the cream, making it an ideal soup for those of us who have to deal with some diabetic restrictions. The flavors come together beautifully of themselves without the help of the cream. A most enjoyable summer evening meal starter.
