Great use of all of those garden tomatoes! I agree leave the avocados on longer than recipe calls for.

Delicious. Definitely leave the avocados on the grill for MUCH longer than the recipe calls for to really get a great flavor. This makes a great presentation and leftovers are great, as long as you eat them quickly - which shouldn't be a problem.

I had fun trying something so new & different "grilling an avocado...making pesto sauce". This salad is a lovely combination of flavors & colors.

I tried this recipe and loved it! The presentation looks wonderful, with the bright colors of the tomatoes and avocados, and a flourish of red onions! The small amount of heating on the grill seems to intensify the flavor of the avocados, as well as the color. I left my avocados on the grill a bit longer than the recipe calls for. We had this dish, with grilled chicken, for dinner. I made it again for lunch, served on a bed of mixed salad greens (with dried cranberries and more nuts – delicious! It would make a lovely ladies lunch.

I wasn't that confident as I prepared the salad that it would turn out very well...but the presentation turned out to be beautiful and the salad is absolutely delicious! I will make it again when entertaining as it's a lot of food and goes a long way.
