    This was a wonderful combination of rich, warm flavors. It was satisfying as a main course, but would also be a nice side dish. My family loved it and I will certainly make it again.

    really good and the directions were perfect. i used button mushrooms because that's what i had on had and it was still really tasty.

    I used kobocha squash since that's what I had on hand and left out the wine. This was a nice risotto with the perfect intensity of squash flavor, not overpowering at all, but also not overshadowed. Plus the smell of the roasting squash is really wonderful.
