Been trying to find this for years! I am from West Tennessee-not talking about Memphis, but the rest of the region-this is the kind of BBQ sauce you could get at every little hole in the wall BBQ shack around, until a few years ago. If you are expecting a thick, syrupy, molasses type sauce-just pass this recipe on by. This isn't the one for you. If on the other hand, you want a flavorful non-sweet vinegar type sauce, this is the one! Even my daughter, who won't eat anything hotter than Worcestershire sauce, loved it! It was maybe 2 drops per bite, but still, that says alot about the flavor of it. I made Jack's BBQ chicken with the marinade, the rub, and the sauce. Family demolished it. The apple juice in the marinade and roasting pan helps to balance the spiciness and vinegary-ness without overt sweetness. This would be superb on pulled pork bbq.

Amazing! Ive been looking for a Carolina style vinegar sauce. This was perfect! I did make it two days in advance to get the flavors to develop.

This recipe takes me back to my days as a little girl when my Dad would BBQ in the back yard. He would use a vinegar sauce on everything. I had forgotten how much I loved the flavor. Great memory. Great recipe!

Great! I did a version with a little Allspice, additional hot chili powders, pinch of cummin and a kiss of clove powder that had a bit more body and complexity. Some wanting a more North Carolina style might add mustard or mustard powder for an interesting tang. Great recipe on it's own!

I was impressed by the taste this sauce created with so little ingredients. I also made this for a chicken dish and it was excellent! I placed the extra into a well-sealed glass jar and used it again later in the week for another southern dish. It has a very disinct taste, very diferrent from what I have tasted and made in the past.

I tried Jack's BBQ Chicken recipe with this sauce and it was a hit! Everyone was asking for the recipe. As I was shaking pepper into the sauce, the lid accidently came off and the whole bottle of pepper poured in! I was able to scoop some of it out, but needless to say, there was a lot more pepper than the recipe called for! Everyone still raved about it!

A very good sauce. I agree 100% with the reveiw from 12/31/04. Most folks from the carolinas don't care for that sweet gooey stuff.

This sauce is so easy to make and is delicious on beef, chicken, and especially pork. If you aren't used to Carolina-style (vinegar based sauces, then you might have to adjust your tastebuds to the different flavor and consistency. A little of this sauce goes a long way!
