I have made this Pumpkin Cheesecake 6 times and every time I make it I love it more, it is super easy and incredibly delicious!!! HOLLAH!!!!

Just made this last night as a practice for Thanksgiving. Came out great. I agree that the spices could be doubled and the gingersnap crust is a great idea; I do that with my pumpkin pie. One major change I made: I didn't want such a big dessert so I halved the recipe and put it in an 8" springform pan. Perfect fit. I baked it just about the same amount of time, 1 hr 45 min; that could be because the water wasn't boiling when I poured it in the pan and also I opened the oven a few times to check. Having never made a cheesecake before, I am very happy with the results. Will be making again on Wednesday!

OMG! I served this last night at a girls night "in" and within 30 minutes it was GONE! Let me give you some tips... I used ginger snaps instead of the graham crakers - I think this was a superb idea - everyone loved the crust. I did nearly double the spices in fear that it would be too bland and I'm so happy that I did - I have people ordering for the holidays. The filling amount was too much for the 10" springform pan - I wish that I left 1/4 inch at the top because when it bakes it expands and can crack - when I looked at it after the hour +45 mins I thought it was a disaster nearly overpouring the sides fortunately it turns out that it settles back into the pan. I used homemade whipped cream to hide the imperfections. It truly was amazing. Oh - and this was my very first time making cheesecake. I will do this again!

Delicious! I have made this for the last three Thanksgivings and I'm making it again this year. Super creamy and not too heavy. It's easy to make, just be sure to follow the instructions to a T! With the time needed to bake and refrigerate it's best to make it a day or two ahead of time.

This is the best cheesecake! My friends and family look forward to when I make it every year. No modifications needed. Just a tip for those of you like me without a roasting pan - buy a disposable one from the grocery store and it works perfectly!

AWESOME, AWESOME, AWESOME!!! I made this one year for Thanksgiving and have gotten requests for it ever since. It really is famous in my family! Super easy to make, came out delicious. Just as good or better than Cheesecake Factory. All I would say is, follow the recipe to a T, do the water bath, refrigerate it for the recommended time, no short cuts or cheating! For a great use of pumpkin, this is your recipe! Can't recommend it enough.

WOW- this was seriously the best cheesecake I've ever had, and bonus that I made it! It was so incredibly creamy and just the perfect amount of pumpkin flavor. I followed this recipe exactly, except for making it in a 9" pan because I didn't have a 10" pan. I had leftover batter (some of which I ate, so I made 12 mini cheesecakes in my minicheese cake pan. I didn't have a roasting pan large enough, so I used a jelly roll pan and just poured as much water as I could fit.
This will be my go-to cheesecake recipe; I plan on making it for Thanksgiving. I had looked at making a couple other recipes (Paula Dean's and also one that had high ratings on all recipes, but decided on this one and I'm so glad I did.

This was my first attempt at making cheesecake. My 15 y/o granddaughter and I made it together. Grocery store was out of graham cracker crumbs so I bought graham crackers and made my own. Granddaughter was impressed. My springform pan was a 9" so I couldn't quite fit all the filling in. Baked according to directions and no problems. No cracking!! It was DELICIOUS!! We were trying it at 9:30 a.m. because we couldn't wait!! Everyone I gave a piece to raved about it. I thought the crust got a little overbaked and crunchy but everyone who tried it LIKED that part. I will be making this again for Thanksgiving!! Thanks Foodnetwork.
