I made this stuffing for the first time this Thanksgiving (after searching for a recipe that included both kale and sausage--it was, hands down, the best stuffing I've ever had. It turned out perfectly. I was skeptical, looking at the list of ingredients, that there were no fresh herbs included. (A Thanksgiving stuffing without sage? But I have to say, it had such an amazing breadth and depth of flavor, it didn't need any extra herbs. The flavors of the sausage, leek, and parm infused the entire dish. I used home-made focaccia (found a great, easy recipe on the Williams Sonoma website. Cubed it up the day before and let it sit out on a tray to dry up. I used 1 lb of butternut squash (I wish the recipe specified an exact weight might up that to 1.5 lbs next time. Otherwise, I found the ratio of ingredients to be perfect. I might try spicy italian sausage next time; I think the extra kick would complement the kale nicely.

I made this for Thanksgiving and think it was just absolutely killer. I left out the butternut squash because I'm not much of a fan, and I didn't miss it a bit. I couldn't find Italian sweet sausage with fennel so added my own fennel seeds to a regular sweet Italian sausage. I used a rosemary foccacia because onion wasn't available, and it was a fine substitute. It reheated well; I made it hours ahead of time and a quick trip to the microwave was fine, but I bet right from the oven would be so much better. I will definitely make this again. In fact I want more of it right now. Off to the fridge for leftovers!

Absolutely fantastic! Tried this for Thanksgiving last year and have made it numerous times since. Guests and friends agree this is probably the best stuffing they have ever eaten. Not hard to prepare. Can be eaten as a meal almost by itself and is good with just about any main course. Even my picky teenager son loves it. Thanks so much!

Best. Dressing. Period.
I wanted to make a healthier version of dressing for the holidays. So I found this recipe and hoped it would turn out okay and not make my family wish they'd just made the traditional boxed stuff. I made this with chicken Italian sausage and the herbed foccacia my store had in the bakery. THEY LOVED IT! My mother asked for the recipe and made it 2 more times before I left. It was a wonderful surprise and a real crowd pleaser! I substituted the butter for olive oil. As an added flavor punch we drizzled white truffle oil over the top. DELISH!!!! ;o

This dressing blew my socks off!!! I made it for the first time this Christmas and served it to many family members. They all loved it and raved about it. I also gave the recipe out to those that wanted to make it themselves. The key to this dressing is finding the onion foccacia. I found a bakery in a local grocery store that made it. The foccacia, combined with the butternut squash, kale and saugsage, made this dressing unique and memorable. If you are looking for something festive, but different, try this outstanding recipe!

This is the best stuffing we have ever, ever made! EVERYONE loved it. It is like a meal in itself. All the ingredients compliment each other beautifully. We diced our butternut squash even smaller than in their picture, like 1/4 inch pieces. Not only does it taste great, it looks great too!

I've made this recipe for a couple holidays and it has been a big success every time. It's not difficult and you can even play with the ingredients to suit your likes. Give it a try, you won't be disappointed!
