Great recipe, especially if you are a experimental chef. I used Italian sausage in place of bacon, and heavy cream in place of milk. I did spice it up with some cayenne pepper, and some chilli powder, I can attest to the fact that the left overs were gone the very next day. Thanks for providing great bones to a good meal.

Didn't really love this soup. I didn't use bacon so that could be the reason why I thought it was kind of bland tasting.

Delicious!!! I skipped on the flour (basically because it didn't come home with me from the store!, chopped up the potatoes much smaller, and slow simmered the soup for about 15 minutes longer. So easy, and so worth it!!

This soup was delicious!! Without looking at the recipe ahead of time (my husband picked it out, I assumed broccoli soup = cheesy soup. Not the case...
This soup tasted fresh & healthy... and it was really good too!

Overall, I thought this dish was okay. I definitely should have read the reviews in advance, as I would have made some extra bacon to crumble on top. Although you do taste a hint of smoky flavor in the soup, the overall bacon taste is really lost. I do think it had a nice creamy texture using 2% milk and not whole milk or cream, and it definitely tasted like a broccoli chowder. However, I did find it to be a bit bland, probably because of the lost bacon flavor. The cheddar toasts were delicious, and I do agree that the mustard added a nice zing to the toasts. I served this with a spinach salad with a warm mushroom/balsamic dressing. Overall, a good meal, but not great.

I was completely worried that the broth wouldn't have enough flavor...since no spices are mentioned. Thankfully I decided to keep the hickory smoked bacon whole and in for the whole time despite other user's reviews, which provided plenty! However - I will warn that when the soup is ready...the bacon will not be of any use. It will have lost its personal taste completely so I'd advice to either fry new and put it on the top when serving, or just do without the pieces themselves.
To share my other additions that I think helped: I added a couple extra potatoes (I like hearty! and the recipe says 10 mins but mine needed about 15 to get a nice soft consistency. Also, I used 3 tablespoons of flour to ensure it was slightly thicker...
But tatertot1281 is right, you can take out or add in virtually whatever you'd like, its very customizable!
