I've done this with Sharp Cheddar - especially works well with Sargento's fine shreds. In the frying pan or the oven, a side benefit is that a lot of the excess oil separates, making these more healthful. Rather than making the larger circles and bending over a rolling pin, I make smaller circles for flat "crackers". If done in the frying pan, I cover the bottom of the pan to saute until slightly crispy. I lift out and drain on paper towel, then breaking into bits and pieces and use in place of croutons in a salad. It's possible to combine with bits of bacon for extra flavor.

These are easier than you might think. If using finely grated parmesan you can cook for 5-6 minutes. I didn't grease the parchment paper and they turned out just fine.

Easy and delicious, and low carb. Works best when you follow the directions to grease the pan.
