    I love soup and so easy and quick to make. The store didn't have chorizo at the time so I bought bulk pork sausage and made a chorizo substitute with chile powder, cumin, garlic, cilantro and cider vinegar. This one is a keeper.

    I make this a lot when I have nothing else to make. I make it vegetarian though using vegetable stock and 86ing the chorizo and chicken. I've found using more beans and tomatoes and sometimes even Boca crumbles works great! And great for protein :

    OMG, this one is a keeper. I used Mexican chorizo instead because I can't find spanish chorizo. Everyone in the family loves it. It's even better the next day. Love Rachel Ray!

    I thought this had an interesting combination of flavors. It was my first experience with chorizo and I was pleasantly surprised. I think it was also my first experience with fire roasted tomatoes. The smoked cheddar cheese really topped it off. I followed the recipe to a "T" and will probably make it again the exact same way.
