The olives and chicken are great together! I varied the recipe because we have small children and it was fantstic. No red peper flakes. I also made a bit less fatening version by removing the skin after it browned and removing the chicken fat. (I have to watch my waistline.

It's very easy to make and soooo delicious! All of the flavors of each ingredient result in a wonderful blending, but are still distinctive to the palate.

This is one of the rare recipes that is very easy to prepare for the average cook, yets yields AMAZING results.

If you are looking for a dish to serve company that gurantees "wows" from your guests, you should try this.

Our chicken breasts were very large, and took a little longer (added 5 minutes than the recipe. After adding the wine, just keep your eye on it and its ready when you cut into the thick part of breast and juice runs clear and meat is no long pink.

For best results, its imporant (as always to make sure you use quality ingredients and definately FRESH parsley. If you compromise and start substituting cheaper items, you will not achieve the magnificent flavor this dish can deliver.
