Love Love Love this meatloaf. I was never a meatloaf fan as a kid but now I always have some in my freezer. When I make this I triple the recipe and freeze the individual loaves, so all I have to do is pull out a couple and defrost for dinner. One time chopping and mixing and I have several meals.

I made the meatloaf twice, once using it with ground sirloin and then again with just ground chuck. I liked the chuck better than the sirloin, and I really liked the meatloaf recipe. It was very tasty.

I could never make a good meatloaf before this recipe. I make this all the time now. I usually leave out the bell pepper and onion because I usually don't have them on hand but it still comes out awesome! And I also don't coat the loaves with the olive oil because it comes out too greasy for my taste. I just spray the pan lightly with cooking spray and wipe before placing the loaves in so they don't stick. The last couple of minutes of cooking I add some ketchup to the tops of all of the meatloaves. I love that everyone gets their own little loaves. Great for kids and easy to save leftovers too!

This was really good tonight. I especially liked the meatloaf!! I used to always serve meat loaf with a ketchup and brown sugar mixture on top. I didn't add any topping and found that the flavors came through better. The olive oil on top really had a wonderful flavor! I will make this again for sure! It also cooks a lot less time than my old better homes and garden recipe. Thank you!

This is a regular go to meal for me. The only thing I do is add a topping for the meat loaves in the last 5 min of baking. I mix ketchup, mustard, brown sugar and black pepper. Then slather it on top. Very tasty & can feed a crowd! Thanks Rach! :

Meatloaf was super moist, a bit greasy, but that may be because I used 1/2 ground sirloin and 1/2 ground pork. And I didn't have any flour to make a roux, so I used cornstarch instead and the sauce for the mac and cheese came out a bit runny, but still delicious.

Best meat loaf ever!! I put a topping on it. Found it on another recipe somewhere....ketchup, tomato paste and dijon mustard mixed together and brushed a thick coating all around meat loaves...that added a little extra something that our family loves. I have made this for my family and other families and it has been well recieved! Will use it over and over. Perfect comfort food with mashed potatoes and green beans.

I followed the meatloaf directions exactly, except the part about making them into 1 inch loaves seemed a bit impossible (mine were more like 2 to 2.5 inches tall, which called for a slightly longer cooking time. The olive oil coating made the exterior of the meatloaves crunchy and flavorful. Hubby liked it, and I will make this recipe again.

Now the mac and cheese...it was not bad, but I've had and made better. It needs cayenne and maybe a little diced ham or something salty to give it more flavor.

4 stars for the meatloaf, 3 stars for the mac and cheese.
