The only complaint I have about this cake is that it is incredibly rich. Other than that it's the perfect chocolate mint cake. It does take time and planning ahead though, it's not something you can whip up a few hours before a dinner party.

This cake is sinful....dark, dense, fudgy, rich, not too minty, & best of all, easy to make! My family LOVES Girl Scout Thin Mint cookies, and this cake is like over-indulging in Thin Mints!! To save time, I skip the sauces & serve it with homemade whipping cream, & warm a rich, flavorful ice cream fudge sauce to drizzle over it....rave reviews all around!! This has become one of my most requested recipes. I've made it so many times, I know the recipe by heart!!

My daughter (13 yrs.saw this while I was at work and thought it really sounded good. Well I had to make a birthday cake for one of the girls in our office, and my daughter suggested that I do this. Well we decided to make it, however she wanted to do it. We had so much fun--forgot one of the steps--didn't have fresh mint, used mit extract, but yet everyone at work raved about it. So now my daughter and I decided that we need to make it again and to follow the recipe the right way.

I found this recipe when I searched for recipes to use mint syrup in. I had some left over. We love the chocolate mint combination, so I thought I'd give it a try. It was a LOT of work (and I already had the mint syrup made, but let me tell you! Both my husband and I LOVED this dessert. SOOOOO good. A lot of the reviewers have said they didn't bother with the sauces -- don't listen! The sauces make it, especially the mint one. The cake has a slight mint-ness to it, but with the mint syrup on top -- unbelievable! On my second piece I decided to opt out of the additional cocoa sauce (choc. cake, choc. frosting, enough right?... mistake! This cake MUST be enjoyed with all 3 -- real whipped cream, mint syrup, and cocoa sauce. Several hours of work, but oh so lovely a result!

My husband loves peppermint anything. I am not such a big fan. We gave this recipe a shot - doing all the steps together. It did require alot of work - but the result was fabulous! I DEFINITELY recommend making the mint & fudge sauces. The combination on the cake was simply decadent. If you are looking for a dessert recipe to impress, and don't mind putting in the extra effort - this is it! Don't skip a step!!

This recipe is terrific. The cake was delicious. It took a bit of work to make and I did not make any of the sauces, but it was worth it. It is very fudgy in the middle, very yummy. I think it tastes better the second day. Good served with just whipped cream or plain if you don't want to go to the trouble of making all the sauces. Excellent!!
