I made this Saturday night and both my husband and I enjoyed it very much. I used leftover roasted chicken and added 1/2 cup wine and 2 cups stock to the veggie.

Really a great recipe.I addded some cream, celery, kosher salt and fresh pepper which I belive enhanced the dish.

I agree that Emeril's recipe is so much better than this one.

Sorry, Rachael, I tried. I saw her make this and I thought I would try her version for dinner tonight, but I was very disappointed. It does not come close to EMERIL'S Chicken a la King. His is just as easy to make, and everyone loves it so much. This one can't compare at all! Go look up Emeril's recipe (and read his reviews! Trust me, you will absolutely love EMERIL'S version of Chicken a la King!!!

I think that it needs to have a little more sauce to moisten the biscuits.

I just finished this wonderful version of chicken a la king. I was rather nervous about the sauce after reading other reviews. I read a few other recipies for chicken a la king (emeril's and decided to take some of those elements into my version of this chicken a la king. I had some chicken breasts that were already pre-poached in my freezer, so I took those and heated them in 1c. chicken stock, and 1c. white wine (all I had. I cooked the mushrooms (I used baby portabellos and onions, along with a clove of garlic, for about 5 minutes. I set those aside in a bowl, and then made a roux in the pan with the butter and flour. I added the hot stock/wine to this and then added about 1/2 c. skim milk to make up the difference. I also added an egg yolk to this, the result was a beautiful sauce. I then added the chicken, peas, onions, mushrooms, and pimentos. My boyfriend absolutely loved it and was very excited to know there was more for lunch the next day.

I made this recipe for my family last night. It was so easy to make and delicious. We had no leftovers! I'm on a low-carb diet so I didn't eat the biscuit but the rest of my family did and they loved every bite. Thank you Rachel Ray!!
