I really like this recipe. however, I think it is a little too tomatoey for me. Next time I will only use 1 can of tomato paste. I meant to buy a jalapeno to spice it up but I forgot it. I added groud red pepper and hot sauce instead. I don't like beans so I left them out. I added an extra can of corn, plus a red bell pepper and okra to replace them. I like a lot of vegetables in my soups. I really like the cream cheeze in it with the added pepper jack cheese. Very good!

I had high hopes for this recipe, I made this recipe to the tee, and it was not great, at all. It tasted overly processed (too salty, if it had a less canned ingridents, and more fresh ingridents it might have turned out better. Will not be making it again.

Very good and easy too! I omitted the hominy, and extra can of tomato paste. I added a jalapeño, chopped carrot and a can of diced tomatoes to the vegetables. It was spicy and really good. It makes a lot so I shared with a few of my neighbors.

Really great soup! Hearty and tasty.
I did not use the hominy, ranch beans or cream cheese. Instead I used kidney beans and a dollop of sour cream at the end. I garnished it with raw onions, avocados and chips. I would make this over and over again!

Great soup! Used black beans in place of ranch beans. Used Fritos as a substitute for the crackers. Everyone, young and not so young, loved it.

The first time I made this, I made it just as described and my entire family loved it. This time, I didn't have tomato paste OR ranch-style beans. I substituted tomato sauce for the paste by adding 2x the amount required (2 x 8 oz = 16 oz and reducing the amount of chicken stock accordingly (28 oz - 8 = 20 oz. I also added about a teaspoonful of brown sugar to compensate for the lost sweetness of the paste. I substituted black beans for the ranch-style beans which probably caused my soup to be a little looser than the first time; The flavor was still absolutely delicious and was once again enjoyed by kids and adults alike. I also used a pre-cooked rotisserie chicken from Costco for the meat. What I'm trying to share is that this is a forgiving recipe and as long as you use ingredients (particularly as relates to the salsa that appeal to your tastebuds, you're going to love the result!
