This is the best recipe. of course, I have made it several times. One time, I substituted left over pork chops. Yumm.
    Thank you

My boyfriend and I LOVED this recipe! I did end up substituting hominy for southwestern corn since I'd never had hominy before. And we used black beans instead of ranch-style b/c I couldn't find any. But I added a little ranch dressing to the chicken and he really loved the flavor. We couldn't stop raving about it the whole time we ate it!!!

Delicious and Super simple! It comes together really quickly, especially if you already have the chicken cooked. I used left over roasted chicken from the night before. This recipe even won my Husband's Company Chili Cook-off. I can't think of anything I'd change in this recipe.

I was surprised to see Hominy in the recipe, but i though it was a yummy addition. My kids didn't even notice, but they're not picky anyhow.

A Great easy to fix dish. I replaced the hominy with "black eye beans, & used a can of "refried beans" in place of the "can of ranch style beans" . I sauteed bite sized pieces of chicken in a different pan until lightly browned and "deglazed that pan with some of the chicken broth, I did this while in my large pan I Sauteed onions, green bell peppers, and garlic in a small amount of vegetable oil and followed all the remainding directions. I did add a small amount of cilantro during the last 5 minutes plus a sprinkle of cilantro along with some shredded cheeese for garnish in the serving bowls

I substituted more corn for the hominy, because I didnt think my kids would like it. Plus I could not find Ranch Beans, so I used black. It turned out awesome and all three kids loved it.

VERY GOOD! but... a lot of changes, once I checked the fridge. my son ate my leftover turkey, so I had Mexican chorizo i used for meat. Didn't have bell peppers, so omitted them. same with the hominy. instead I used 2 cans of corn. also substituted ranch beans for black beans. The rest of the recipe was prepared intact and it was a big hit! so glad i did not abandon the recipe because of lack of ingredients. The changes were great. Even my picky Irish husband loved it! oops, forgot to mention. if you like to cook mexican food, save yourself some money and get a recipe on line for taco seasoning. make it at home in quantity and put in a jar to keep. then spoon out as needed for tacos, burritos, soup, etc. saves a lot of money on DOLLAR spice packets.

This recipe is great for cold weather. It freezes well. Make sure and sit the cream cheese out to room tempature before using. I had trouble getting it to melt very quickly.

Very good- loved the cream cheese in it, and I love how versatile it is! Next time I'd add a jalapeno to make it a little spicier. Also, we enjoyed it with tortilla chips, but I don't think the shredded cheese on top was necessary. And I love the idea of serving it over rice, we'll def. try that with the leftovers!
