This stoup was awesome! I'm a vegetarian so I've made it with and without the chicken in it. Every crowd I've made it for had rave reviews! My husband doesn't like his veggies and he even ate it. Definitely a go-to meal!

She shoots, she SCORES with this recipe!!! It was amazing, and was even better the second (and third! day! I made the whole pot and it's just my husband and I. We kept going back to this soup. When it got low, I just added more chicken stock and a few more chopped veggies, and on the third day, I stirred in some shell pasta. I can't say enough good things about this "stoup." Another wonderful recipe from Rachel! A crown pleaser, definately. Will be making and taking to my next pot luck dinner.

This stoup gets more delicious as the days go by. Olive tapenade really adds the final touch.

This recipe was great! I added extra garlic cloves and used thinly sliced chicken thighs which I had in the freezer. I also made my own tapenade as I couldn't buy any. My hubby raved. I great all round meal, delicious.

I have made this several times this winter. My husband and I really enjoy this on cold winter evenings. I have found that you really do need the exact spices for this. I have added a little thickening before and it is still dunkable.

This soup was definitely hearty and healthy. However, something was missing-it was a little bland and I felt had too many potatoes. I couldn't find Herbs de Provence, so I substituted like the recipe said, but it still needed a bit more flavor. Maybe the Herbs de Provence would have done the trick... It was ok-I find some of Rachel's other soups much better (in particular Ribolita!

I love this recipe. After making it 10 times, I'm finally reviewing it for the world to see. It's easy, tasty and great for cold days and sore throats.

This recipe is quick, easy, and wonderful every time I make it. I live alone and can make a pot of this and eat it for several days with out growing sick of it. Thanks Rachel!

I went in Search of Herbes de Provence, because I live in no mans land (found them at Williams-Sonoma online. They MAKE the Soup! You HAVE to use them. You'll start using them on everything! The Olive Tapenade makes it fabulous. It's quick, easy & does freeze well. But if I freeze, I add the zucchini when reheated or it gets too soggy for me.
