Wow! These were really great! I cheated and used can corn. As a mother of 4 under the age of 5, I didn't have time to do the whole fresh corn bit. Anyway, I made these for my daughter's Thanksgiving Celebration at school (1st gradeand the platter was gone in no time. The teachers enjoyed them just as much. When my husband tried them, I had to make another batch for him at home. Very easy and a great way to get kids to eat pumpkin and corn!

The fritters were tasty, crisp on the outside, and soft interior. We were not sure about the interior consistency, as we cooked them for 3 minutes. We were afraid to cook them any longer. We did a drizzle of cane syrup first, and then tried adding a 100% maple syrup drizzle also.
