used this recipe using 7.5 ounces versus 8 oz of choc and it worked out just fine. yes messy but worth the raves.

My guests LOVED the truffles - but they were a pain in the neck to make. It was very messy - looked much easier on TV.

These are delicious and easier to make than I thought. I never made truffles before, but I just followed the recipe and they came out beautifully. My 15 year old daughter says they should get 100 million stars!

Things I learned that I'll do next time.
*Blend the chocolate into finer dust.. the cream didn't melt it all the way.
*Let it set for longer, as I really had to press the baller onto the side of the pan to pack the candy in there.
*Dip the baller into the cocoa each time I scoop, so it comes out easier.
    Great recipe though! Wonderful flavor!
