This is the fudge my mom used to make. My mom would only make this fudge, weather depending. It will not set up if there is too much humidity. But I love this recipe.

If the recipe doesn't say stir while cooking then don't stir. Also, If this recipe didn't turn out it's probably because you didn't cook it long enough. As soon as it reaches the correct temperature you stop cooking it by taking it off the heat, then add butter, vanilla, and nuts and begin beating. It doesn't have to sit and cool. You beat it till it just begins to get hard (but you're still able to pour.

worst recipe ever to follow! i used to make fudge with my moms recipe, but i tried this "crazy woman's " recipe because my wife wanted me to. when i 've made fudge in the past, i would take the fudge off the burner and add the butter, vanilla, and nuts ,then let it cool for a little bit before beating it . this crazy paula's recipe said nothing about a waiting period,so i added and then stirred right after taking it off the heat.. never did set up, so i waisted my time and money on this crap of a recipe.... guess i'll stick to my old reliable recipe....

    Linc:

I ve seen her doing it on TV yesterday. She used the mixer for no more than 10 seconds i think, just to mix it up, and not to beat.
I haven't tried this recipe yet, but im going to today, and will sure share the experience.

Humidity, Humidity, Humidity!!!!! Must make any type of candy on days with low or no humidity otherwise it will not set. Also you are to beat the fudge for up to 10 min until candy is thick and no longer glossy. This is true fudge the stuff with the Marshmallow Cream is not homemade. Cecilia

i really wish the recipe had said...don't stir. i stirred and ended up with a mess. even with the beating, it did nothing to improve the texture. love you, paula, but could've used more specific instructions on this one. i'm not a fudge-maker, so this was my first attempt. i will try it again without the stirring.

The recipe itself is good. I followed it to the letter, but since I had never made fudge before, I didn't know how long to beat it once it had cooked. It set very soft, and ended up shiny like a ganache...which is probably what I will be using it as. If someone would write in the comments how long the cooked mixture should be beaten, it would probably serve to help those of us who didn't turn out a good batch. I'm going to try it again, but before I do, I'm going to research how long to beat it before allowing it to set.
