    Two different people tried to make this fudge and it turned out horrible each time. I left the knife sitting in the fudge and it started to disappear like quicksand. Not only does this fudge not set and "Work fast, as mixture thickens quickly" is an error, it doesn't even taste good soft. Total waste of time!!!!

    There are fudge recipes that do not require cooking.This is what its name indicates: an "old time chocolate fudge' recipe:. And it is a good one,
    Making candy or bakery recipes requires being precise in the measurements, cooking temperatures, and cooking instructions For the cooks who have come along since those of us who were cooking way back in the 50's,the term "cook to a soft ball stage" may seem unclear,but a candy thermometer is dependable, handy to have and forever solves that question

    I agree with others that have posted this is a poorly written recipe. I love Paula's cooking in general BUT this did not set up. I probably didn't cook it long enough after reading some of the positive reviews BUT if it had better instructions such as cooking times, it might have turned out better. I'm going to look for another cook's fudge AND read reviews before I make it. Shame on me too.

    I had the same problem! I tried this twice and came out with tootsie rolls! I followed every step, and it just didn't work.

    what does it mean when it says a small drop forms a soft ball ?? does that mean that the chocolate is to form a ball in the water??

    I am not sure if I didn ot cook it right or if it is this recipe. My fudge turned out like chocolate taffy. It tasted good and would be good warmed up and served w/ ice cream. But it is not fudge. I used a candy thermometer too.....

    The recipe was very easy to make and the consistency of the fudge was quite good, but the fudge lacked the rich fudgy/chocolate flavor associated with fudge. This fudge was rather bland tasting - it tasted more like chocolate cake than fudge. Quite diappointing.

    I've made fudge every year for Thanksgiving and Christmas for over 30 years. I have used several different recipes and all have come out very well, until this one. There has to be something missing from the ingredients in this recipe. When I started to cut it in squares, it just crumbled. The taste was like chocolate and sugar, texture was gritty, and it completely lacked the creamy texture of any other fudge recipe I've ever used before. Last year I used one of Emeril's fudge recipes and it was fantastic. I'll be using his recipe from now on because this Old Time Fudge recipe was an Old Time Failure.

    I've tried this recipe a couple of times and each time it comes out like chocolate taffy instead of fudge. Paul Dean leaves out specific instructions and makes it sound like you just dump it, heat it to the temperature stated, then take off stove, add butter, vanilla, nuts and that's it. Fudge can be very difficult so this is not the best recipe since it does not harden like fudge but more like a soft taffy.
