I marinated the chicken over night. It was absolutely delicious! Very lemony and light. I can't wait for the leftovers tomorrow.

I tried this recipe and it was so easy! I prefer boneless chicken breasts over bone-in chicken pieces so I bought boneless skin-on chicken and this was soooo good! Super easy and great the second day as a chicken ceasar salad. This would be fab for a picnic or baby shower food!! It turned out perfect!!!

Pollo Frito is a nice light southern fried chicken with an extraordinary taste from the lemmon, olive oil with salt marinade.
