    This chicken was easy and delicious! It got rave reviews from our dinner party. I recommend marinating as long as possible to increase the lemon flavor.

    Pollo Frito!
    Prepare your marinade & TASTE as U season your marinade!!!!!
    Inject chicken &/OR Marinade - @ least for 2 hours, turning pieces q 30 min. Overnight is better. I really like to inject the meat as well as marinade.
    --
    Possible Combos in substitution OR for adding to Giada's recipe (w/EVOO:
    1 sage, garlic, marjoram and lemon zest & juice.
    --
    2 savory, thyme and sage. Opt - lemon zest & juice
    --
    3 lemon zest & juice, tarragon & garlic
    --
    4 Rosemary, garlic, & lemon zest & juice
    --
    5Thyme, rosemary, garlic & lemon zest & juice
    --
    6 Add white wine or a zesty red wine!
    --
    7 &/OR, white wine vinegar OR champagne vinegar!
    --
    Serve as is or whip up a sauce with that great marinade
    (Reserve & cook thoroughly on stove top. When chicken
    is done, remove from skillet temp, & add the cooked
    reserved marinade (reduce return chicken to skillet.
    --
    Serve w/baby potatoes, fried OR roasted in the above combos!!!!!, couscous, barley, millet,
    bulgur wheat, rice/risotto, pastas, etc, etc.
    Sauteed spinach OR kale, Greek salad, crusty bread. And, a good wine.
    Try these combos for roasting OR grilling your chicken.
    If roasting chicken, add the combos to the cavity of the chicken as well as to the chicken itself.

    I did like the olive oil flavor, that gave it a nice, out-of-the-ordinary touch, and I also liked the subtle lemon flavor; a nice summery change from plain fried chicken. Other than that, I was a bit underwhelmed. I thought it was going to be a knock-out judging from all the 5 stars, but I thought it was just ok. My husband even said he prefered my regular old fried chicken recipe to this one :,

    Though we used skinless chicken breasts, and had never fried chicken before, this was easy and turned out better than we expected, and a meal favorite!
    Squeezing fresh lemon juice on the chicken before eating made a tremendous difference, and made it taste all the better.

    I agreee that the chicken was very moist. However the outside was tasteless. The flour needs to be doctored, as a previous cook suggested. This one was a disappointment.
