good recipe for a basic multigrain muffin...not too sugary or greasy...I used figs, apricots and cranberries, as well as substituted apple sauce for half of the brown sugar and Bob's Red Mill Gluten Free Mighty Tasty Hot Cereal for the bran...

Yeah not that great. These definitely need something else. They got a little bit better when they were cold and came out of the fridge the next day...perhaps the flavor melded together more after a few days.

This recipe was okay. I added honey on top because my older brother wanted a sort od honey bread. Overall very nice.

No flavor at all! I added some raw honey to the bottom of a few muffins and those were the best plain. I also drizzled a little on top too. The other ones are fine with butter.
I added some vanilla and shredded some carrots too in the next batch.
I wanted the traditional bran muffins, these are something else.

I made this muffin recipe for a healthy morning snack. I did use some substitutions, like I used non-fat milk instead of buttermilk and oatmeal instead of bran. The dough should not be as thick if you use the oatmeal, because as it cooks, it soaks the moisture up. I also put in a really ripe banana and used applesauce (4 tbsp instead of oil. I was trying to get them as low fat as possible. I added a mixture of chopped mixed nuts before baking.They were delicious and healthy!

This is a great basic, healthy muffin recipe that is easy to alter to suit what you'd like. I didn't have a lot to work with the first time I made them. I just used all white flour, cause we have no wheat. I also substituted oatmeal for the bran, and skim milk for the buttermilk. Plus, I added 1/2c of apple butter (though I would have liked to use applesauce, but it's all we had, 1tsp cinnamon, 1/2tsp nutmeg, and 1tsp vanilla. I made the mistake of putting an extra 1/4c flour in, because I thought the batter seemed too thin, and they came out just a bit dry, but other than that, they were delicious. I'm looking forward to experimenting with some fruit and nut combinations next time. I definitely plan on making more. :

I used 3/4 cup of oatmeal instead of oat bran. and 1 1/4 cups of plain low fat yogurt instead of buttermilk. And i used bittersweet chocolate chips. They are really good and moist and with the chocolate chips you will think that you are eating a deseret

I made changes to this recipe, some after reading other reviews and some because I didn't have all the ingredients. I mashed up a frozen banana I had and added about a half cup of unsweetened applesauce. I didn't have any nuts or granola, so I topped the muffins with coconut. I only used two eggs, skipping the egg white. I used a cup of 2% milk and a quarter cup of buttermilk (it's all I had. I added raisins and about a tablespoon of vanilla extract. This is the beauty of this recipe, that it's adaptable and I was still able to make it work with the additions / subsitutions. It was good and simple. I could see where they might have been a little dry. Thanks to all the previous reviewers for their comments. Wait...I used wheat bran instead of oat. Who knows....if I use all the right ingredients next time this recipe might rate five stars!

Bran muffins tend to be dry so instead of buttermilk i used plain yogurt. Next time i think i'll use applesauce instead of vegetable oil to increase the sweetness. I also just threw in leftover trailmix and dried mangos which was awesome. Lastly i used wheat bran as opposed to oat, not sure if it makes a huge difference but it still tastes great.
