I used potatoes and broccoli. I added them earlier then the recipe says because they were uncooked. I also added mushrooms to the minced onions, celery, and carrots before browning them. Once the soup was done, I place a spoon full of leftover stuffing in the center of the bowl and poured the soup around it. Very hearty, filling meal.

I didn't have leftovers because my elders get to cook on Thanksgiving at their homes. So in order to make my own little Thanksgiving this year, I used this recipe. I just used a turkey breast which I roasted, all the suggested ingredients, added Craisins and a can of cream of celery . I also made dumplings from cornbread stuffing mixed with celery salt, sage, thyme, egg and milk. It was so good I can see myself making it even when its isn't Thanksgiving.

This year I decided to add this to my "leftover" recipes (I faithfully make Emeril's Turkey Shepherd Pie - check out that one as well. But I must say, this recipe is fantastic. The flavors blend so well. Adding a scoop of mashed sweet potatoes added sweetness and thicked it just a bit. Try this recipe...it's a must!!!! Use whatever vegetables you have left - the whole family will love it!!!!

I got GREAT reviews on this turkey when I made it the day after Thanksgiving. One of the best tips I learned from this recipe was to pour some of the pan juices over the turkey when storing it so that it stays moist and juicy.

Added some ditalini to make it a little hardier.

I added fresh beans, but they were too crunchy. I also added zucchini. Used more broth. Added noodles. This wasn't too bad.

I made the broth Thanksgiving night and finished the soup after hanging Christmas lights outside all morning the next day. It was easy to finish and delicious! I added noodles and cilantro instead of sage and served it with fresh lime.YUM!
