I made this tonight and we loved it-- even my picky husband! I also made some chicken parmigiana with this same recipe and it turned out great.

I thought this recipe was great. The eggplant sandwich was simple for me to make -- I am really just beginning to cook-- so the ease was much appreciated! My entire family enjoyed the meal. In terms of the recipe, I used two eggs instead of three and I just eyeballed the bread crumbs' amounts. I liked making this dish and will definitely make it again.
