    This is the best root veggie casserole ever. Used low fat Cream cheese
    Awesome,
    I also forgot the Onion and substuted Chives and it is still Awesome.!!
    Will make allot !

    I made this last year for Christmas dinner. Everyone loved it. Then I told them what was in it and some of the younger folks (under 25 freaked. That being said - it is one of the best potato dishes I have ever had and I am making it this year but telling everyone it is only potatoes.

    This recipe was in the Cooking with Paula Deen magazine last fall. I made it for Thanksgiving dinner and it was absolutely delicious! Such a wonderful change from standard mashed potatoes. Several people who were leery because it has a new food (parsnips and a disgusting food (rutabaga tried it and were pleasantly surprised and how yummy this really was. Its definitely on the Thanksgiving menu at our house again this year.
