    Because smoked salmon is salty, I cut the sour cream, lemon and salt in half, which also made the filling thicker and perfect. Added the zest of 1/2 a lemon and 1/2 scallion as well. Then placed all the ingredients into a blender, pulsing only a few times. Garnished the deviled eggs with paprika and a bit of rinsed, drained black caviar, (so it didn't turn everything black. FANTASTIC! Thank you Emeril.

    A great change from deviled eggs. Depending on your smoked salmon, you might want to reduce the added salt.

    We made this for Christmas/New Years and it is so tasty and rich with flavor. We also did a twist and used smoked ham, which was great too. Too bad we can't give this one 10 stars.

    I made these as part of Christmas dinner b/c we had finger food platters as well as our "traditional Christmas dinner" and everyone just loved them! Some family members didn't even like salmon but when they tasted these yummy treats, they had a change of heart! :-D
