Very easy - and very tasty! I used golden raisins instead of pineapple. I also put in some chopped celery. Did not have the watercress, I just put the chicken salad on toasted whole grain bread. DELICIOUS and it looked nice too!

I have been feasting on this for a few days. I mix skipped the bread altogether and just put it on top of a pile of spinach leaves. I like things spicy so I added some extra curry. The pineapple was undetectable so I would recommend maybe raisins instead. Also, I needed more crunch so I threw in some chopped celery too. It was fantastic!

I used golden raisins instead of pineapple, since that is what I had on hand. Keeps well for a few days in the fridge to bring for lunch during the week.

After dieting for 2 months, I found this dish tasty and satisfying. I also substituted the parsley with cilantro. In addition, since my store didn't have watercress, I tossed the salad w/ mixed baby greens & baby spinach. Finally, I used half of one whole-wheat pita pocket. I will definitely make this one again.

I found this recipe a little dry, I added extra mayo to this, enjoyed it for something light and slightly different then the average chicken salad.

This dish was creative, delicious, and filling. I substituted cilantro for the parsley and chopped walnuts for the almonds since they were what I had on hand. Delicious nonetheless. I will definitely make again since it was very easy to make and tasted flavorful.
