    I make this at least once a week. I serve it as a salad, over greens, as a dip with tortilla chips or as a side with grilled tequila chicken....it's so versatile. My daughter and her friend even put this on their eggs for breakfast.

    I cut the salt down to 1t and it was still way too salty - it was the first thing I noticed when I tasted it. Best to leave all the salt out of the dressing and just add salt & pepper to taste when finished cooking. Otherwise, great salad - but leave out the extra salt!

    Wonderful! Eat it alone, with tortillas or with grilled chicken and it's perfect. The flavors are great and the texture is nice too. A lot of chopping but this is worth it and it makes a lot so you won't feel all the chop time was wasted.

    First thing: error in recipe! Do NOT add 4 teaspoons of salt! The first batch of 2 teaspoons is more than enough - 1.5 is actually better. That's my only complaint - this is the best salad ever. It's beautiful and it tastes great!

    P.S. - If fresh corn is out of season, canned white shoepeg corn is an excellent substitute.

    this is the best and believe me, i've tried many corn/black bean recipes!! will take it to our family reunion in october. of course i double or triple the recipe.

    i like to also add green peppers, black olives, and some sharp cheddar, jalapenos or red chile flakes. what ever your guests like. we have a few family members that don't like black olives. what??!! guess that's the italian in me!!

    My friend brought this when i was pregnant and sick and it was so wonderful! we have had it a few times since then. it's a big hit at our house with our 4 little boys and any party we take it to! we marinated some jicama in lime for a bit and added it at the end and it was fantastic!
