This is by far the best chicken recipe I've ever made. I made three batches of the recipe to serve 18 for a Gourmet Dinner party (the theme for the evening was Simply Ina - Recipes from Ina Garten, the Barefoot Contessa. The menu was wonderful but the Chicken with Morels was the star of the evning. I would not mix in other types of mushrooms if you can afford to buy the morels...they are wonderful. Although the chicken is all gone, I saved some of the sauce and morels to serve over rice. Easy to make and absolutely delicious!

Like another reviewer, I, too, used mixed dry mushrooms from Costco. This recipe is a total winner: easy to make, good to prepare in advance for company and totally delicious. I made it last night and my husband is already asking when shall I do it again!

This is absolutely stunning! I used 3 oz. of fresh morels, which I cut up into smaller pieces, and made my own crème fraiche. I also used extra shallots, about ½ cup or maybe a bit more. Don’t leave out fresh lemon juice—it doesn’t taste lemony at all. I also added a bit of regular olive oil when frying the chicken. Could use cremini and shitake mushrooms if you find morels too pricey, and while it won't be the same, the sauce is so good, it will still be excellent.

The morels we expensive so I substituted half of them for creminis. I've never tried morels before, and in the end I was glad that I substituted half of them because the texture was just not for me. I'm a serious mushroom lover, but to me they felt like wet corduroy in my mouth. The flavor was there, but the texture wasn't. So don't be afraid to use different mushrooms (and less expensive ones because it's still a great recipe.

Instead of morels I used a variety of dried wild mushrooms from Costco, much cheaper than the morels at our specialty shop. This is probably the best thing I have ever eaten. My husband still talks about it and it's been over two weeks since I made it. It is great for company becasuse it can be made ahead. I served it with a rice dish and Ina's green beans with shallots. Ina is just the best. With her guidance we can all cook like a pro.

If I didn't make it myself, I would have thought that by the excellent way it tasted, this would have been difficult to make, but it was very simple and easy. The family loved it as well.

I have hesitated to review this recipe since so many use reviews to state political beliefs. However, this is one of te best chicken recipes ever and is easy to do, and reheat, if you clarify the butter. One will never be disappointed. The recipe. as stated, is perfect.
