    Tasty? Absolutely! Mock "goldfish" is exactly what you get with this recipe. One of my favorite low carb snacks.

    We love this recipe! Because I had some shredded cheese that I needed to use up, I tried it before the cheeses called for. We actually like these better. I believe it was the Kraft Mexican 4 cheese shredded cheese. I omitted the seasoning all together, but on some I did lightly salt and pepper. Great!

    I should have followed my first instinct on this recipe as written. Although I love salt, with 1/2 teaspoon of salt to 2 slices of cheese, these were too salty to eat. and I had to toss them. I Of course now that I read other reviews, they are saying the same thing! I guess I will SKIP the salt next time.

    1. SKIP THE SALT - I use 1/2 a teaspoon of my own taco seasoning mix - recipe follows if you care.

    2. USE PARCHMENT, NOT WAX PAPER

    3. USE THE DELUXE AMERICAN CHEESE

    YUM!

    Here my taco seasoning mix recipe:
    * 1 tbsp. chili powder
    * 2 teaspoon onion powder
    * 1 teaspoon each ground cumin
    * 1 teaspoon garlic powder
    * 1 teaspoon paprika
    * 1 teaspoon powdered oregano
    * 1 teaspoon sugar or splenda (not the packets or wheylow, etc.
    * 1/2 teaspoon salt
    Mix well. Makes 3 tablepsoons.

    Quadruple recipe if you want it to equal
    the amount in 1 packet of taco seasoning you would find in a store

    I wish I had read the reviews because the seasoning is over powering and ruins the whole dish. After just 5 minutes the American cheese was burning. I would never use the american cheese again ant the rating for this would be poor.
    On the flip side the Colby cheese was delicious and tastes like Cheese Nips, Excellent. I will make these again and again. As a matter of fact I just took these out of the oven and I am going to make another batch of colby cheese while I throw away the American Cheese Salt Cracker.
    I love the fact that I can eat a snack and not cheat on my low carb diet.

    I made these and was a bit skeptical about whether or not they'd actually be any good. I was pleasantly surprised..they were delicious! I only wish I would have read the reviews first because I agree that 1/2 tsp. of salt is too much. I'd cut back on the salt next time or take it out altogether. I can see myself making these to snack on while watching movies!

    My Son has diabetes Loved these but did ask me to use less salt next time. He says these will be super with chili.

    The crackers look great, sitting there on the parchment paper, but how in the world am I supposed to get them off??? They are completely stuck to the paper. Anyone have a good idea of what I should do next time?

    The cheese crisps were great...the only problem is that we would make a whole batch and then eat them right away. They were great snacks.
