    We love this soup! It's easy to make and the ingredients are items we typically have in the house so it's very easy to throw together...it cooks while you make the rest of the meal. I used half-and-half to save some calories the last time I made it and it was still yummy (although cream obviously keeps it a bit thicker. The sour cream is a must on the top. Thanks Paula!

    We love this soup. My husband and I made it last night... it was so easy and soooo good! I immediately put it in my recipe box. We made it according to the recipe without changing anything. Highly recommended!

    My husband and I loved it. It is a very easy to make, very simple ingredients. I didn't use butter, to cut on calories. Also, we liked it without sour cream.

    Easy to make especially if you use pre-cut and peeled butternut squash available in 2 pound bag at Costco. Thought it needed a bit more flavor and salt so I added a teaspoon of chicken base. Used an emersion blender to puree which worked beautifully. Topped with a dollop of mascarpone instead of sour cream and a quick fried sage sprig! This soup added a special touch to our Christmas Dinner!

    This is the best squash soup I have ever tasted. I made this for a progressive dinner party on our block this year and everyone loved it, several people have asked for the recipe. Absolutely tons of flavor and the hardest part is cutting up the squash. Easy substitution of vegetable stock for chicken stock and this is a great vegetarian dish as well. My 11-year old loved it as well, will definitely make this again.

    This is another excellent squash soup recipe - great recipe for those who don't like anything spicy. I've finally found a squash soup recipe that I can cook for my mother and mother-in-law who don't care for spicy foods.

    I made this soup for a dinner party as the first course and we all could have had it as the main meal - it was fantastic!! I used an immersion blender and it was a snap to make. I also grated some fresh nutmeg on top as well. I went out to dinner tonite and had the restaurants butternut squash soup and I thought Paula's was much better!!! I can not wait to make it for Thanksgiving this year and I will be making it all winter long!! Fabulous soup - thanks Paula!!
