Wow! Had these with pancakes for dinner (which my husband normally dosen't like and they were wonderful!!! I wanted to get more veggies on the plate so I added yellow corn, green onions, chopped tomatoes, and a little cheddar cheese for color. the corn gave a little sweetness when cooked in the frittatas and good texture...Yummo!

Very easy and very tasty. May not be the most elegant dish ever, but they taste very good. I made these for a baby shower and everyone raved. Also made some with chopped baby spinach, sun-dried tomatoes, and feta. Half of them I made in large muffin tins (made 12 they needed a few extra minutes. I tried using paper liners, but I think it worked better to go without and just butter the tins well.

I made this receipt instead of the regular omelet....it was easy and clean....I also used the cupcake baking cups for a better look...I will do this again and I will recommend it!!!

I made these treats for breakfast for my daughter and her friend on a cold blizzardy "snowday". These are very easy to make and was glad to have all of the ingredients at the house. I used sauteed onions, real bacon bits and a blend of cheeses. l will definately make these again. Kids loved them!! Thanks for the yummy recipe!

I used the base recipe for a regular frittata, rather than making "minis." I added some sauteed onions & sweet peppers, and a little half & half, which I think the recipe needed. I served it for Easter brunch and everyone loved it. I will definately make it again.

The frittatas had a decent flavor but I did not care for the consistency of the eggs. The recipe needs cream. My husband said they were ok..and he likes just about everything so this one is definitely not a keeper.

For me, eggs were too rubbery in texture, probably due to the high heat. I tried this recipe again, with some milk and reduced oven temp to 325 for 13 minutes. Also try with a few dashes of Chalula hot sauce - much better!
