It just wasn't very good. I think it would have been better without the butternut squash.

The recipe did not call for enough chicken broth to keep the risotto moist as it cooks. But the finished product was very tasty.

This looked great on the the show but was soggy with little taste after it was made. I was disappointed and would not make it again. I liked the idea of molding it and will use this idea for other rice recipes.

I got it to work alright, but it really didn't have much flavor. I might make it again if I couldn't think of anything better to make.

I tried this tonight...HEAVEN! My husband and I both love it and my 10 year old liked it, "except for the mushrooms".(Go figure

The squash is not the strongest flavor, but lent texture by being firm, but soft enough to eat. Over all, the aroma is exquisite with mushrooms, onions and wine. Subtle and beautifully married flavors.

Definitely a dish we will make again and again.

Like many families, we do not care for any members of the cucurbita family. Thus, we omitted the squash altogether. Because I had a package of rice-a-roni wild rice mix, I used that instead. It's my family's favorite. We also added shredded rabbit haunches and Hericot Verde to make it a complete meal. My family asked for the recipe!

My squash was undercooked too but the worst thing about this recipe is its taste -- or lack thereof. Blah.

I read the reviews and precooked the buttercup squash first then added it. The risotto was very heavy and mushy -- like mashed potatoes. Not creamy at all. We were all very disappointed in this one, but love most of your other recipes.

After all that cooking the squash was still raw. I think this recipe needs to be 'tweaked'.
