I seldom if ever use Rachel's recipies but this was a very good one. The ginger added nice freshness but next time I will combine the balsamic, sugar, garlic, ginger and let it groove together for an hour or so before marinating the scallops. I'd marinate them for 15 minutes but not too much longer or the scallops will cook in the acid. I did cook them in the oven for 20 minutes (ovens vary and the scallops were perfectly cooked as well as the bacon ... not crispy and wasn't expecting crispy, but perfectly cooked and was able to cut them (and the bacon with a fork. Don't forget to season with a dash of sea salt and fresh cracked pepper. A really fresh variation of bacon wrapped scallops.

Do you like your bacon crisp or limpy? Are you even going to eat the bacon?
Did you find 'very large scallops'?
The bacon will never be crispy in the oven like in a fryer. Think of a bacon wrapped filet that is cooked medium...
I cooked my bacon first and it wasn't crispy even after cooking 11 minutes but it was firm. But we enjoyed it. The marinade was very good. I ended up marinading it for 20 minutes as I cooked the bacon. The smaller pieces lost their seafood taste but the larger ones were great and subtle.

I am a culinary student and decided to make this as an appitizer for my final the scallops were cooked perfectly but the bacon was raw i would suggest to partially cook the bacon then put it together and cook it. Overall the flavors were good and it was nicely seasoned. I did allow the scallop to marinate longer then the suggested time. I would make again.

Despite some of the warnings in the reviews, we proceeded to make this because it looked so good on TV. I cooked the bacon for 2 minutes in the microwave, so it was partially done, but still limber enough to wrap around the scallops. We followed the remainder of the recipe, but were disappointed! The bacon was simply just not done. Also the balsamic marinade was not a good pair with the scallops. I absolutely love scallops, bacon and balsamic vinegar.... but this recipe does not do any of them justice. Definitely won't be making this again...

We love most of your recipes however this one was a disappointment. The bacon did not crisp up and was almost raw, we could not eat it. Perhaps it would work if you par cooked the bacon to the point where it would still be flexible enough to wrap the scallops and water chestnuts.. Also, despite the marinade the scallops were bland.

I just had a small dinner party and served these with a nice, dry white wine for an hors d'oeuvre. The guests raved, asked for the recipe, had seconds, and were disappointed when there weren't enough for thirds! Splenda brown sugar and powdered ginger (both of which I already had on hand worked fine. I also want to try this with shrimp instead of scallops, and I might cut my bacon strips into thirds instead of halves. I really liked this recipe, and will definitely keep it in my repertoire.

A nice addition to scallops. Although w/o is also tasty (how can you go wrong when bacon is involved?. It's a little work and something different. Marinated 1/2 lb and left the other 1/2 lb plain. Everyone said they liked the marinated wraps as well.

This recipe tasted really awful.and what a waste of money because as you know Scallops are not cheap to buy.every person that tasted these said no way they would never make these for there guest.so I had to throw all 2 lbs away.I was really surprised because on the show they looked really good and I followed the recipe as stated.
