I added some mushrooms, snow peas, and fire oil to this. My family loved it. It is one of those add anything that is in the fridge recipes. I have made it a couple of times now, adding this and that. Honestly, I can't remember everything I added each time, but for sure I know I added the mushrooms, peas, and fire oil.

I LOVE THIS SOUP. It's such an easy dinner, and it's totally delicious, totally decadent with the noodles. Fresh tasting, easy on the pocket book. LOVE IT!

Alright - I have never had this as a take out, but I love Thai and this was soooooo tasty. I served it with a simple corn bread to make it quick. The family loved it - 11 yr old right up to dad. Keep it commin!!

    Thanks Rachel

I have made this on a couple of occasions. First, I followed the recipe as Rachel presented it. However, with my creative cooking mind, I decided that it would be great to add baby corn (I love this!, bok choy, bamboo shoots and bean sprouts. Because I love spice, I decided to kick it up a notch and add to my bowl of soup (since others may not like it so spicy some cayenne pepper. It was soooo good!! This weekend I am going to prepare it for me and my best friend, both of us love spicy food and so, I am going to add some jalapeno peppers (including the seeds along with the pablano peppers. It should be good!

I like to look at a few different recipes of a dish before making it and now wish I had added some of the ingredients that other recipes called for in their versions.
The noodles seemed to drink up all the broth so it's more of a noodle dish than a soup. And considering all the wonderful ingredients this soup just lacked taste. It needs a kick of something. If I feel like a Thai soup again I will use a different recipe.

I'm Thai and I can say that unfortunately, this is really not even close to a Thai noodle dish.

I made this for my family and they LOVED it. The same week I made it for a friend who had had surgery, she said it smelled wonderful even with the lid on the bowl. I used aneheim peppers and angel hair pasta. It is definately a keeper.
