    These muffins don't taste like traditional lemon poppy seed flavor and all I really tasted was butter milk and lemon juice mixed together.

    I combined my dry ingredients and juiced & zested the lemon the evening before I made these. All I had to do in the morning was melt butter and combine the wet ingredients. I had warm muffins for the family on a school day in less than 30 minutes! The combination of the lemon juice and zest makes these intense but not overpowering. The recipe makes 12 modest sized muffins, so the kids had two each. Next time I might double the recipe but not the quantity and make 18. I did not make the raspberry butter and nobody missed it.
